Pomegranate Berry Popsicles are a fantastic July 4th recipe! I’ve only signed my boys up for a couple weeks of camp here and there, but for the most part, they’ll be hanging out with me.

I think that it’s so important for me to soak them up while I can.  I know it’s a cliche, but . . . it all goes by so fast! My five-year-old has two loose teeth for goodness sake!  And my seven-year-old beats me in Scrabble!  By a lot!  (When I score ten points on a word, he says, “Mommy, that’s good. . . for you.“)

Both my kids still love to play with me, hug and cuddle, and talk to me.  I’m so grateful and want to hold on to it, as I’m aware one day I’ll be dropping them off a block away from a party, and they might only call once a week from college. I get it.  So like I said, I soak them up while I can, and I love it.

Valentina's boys in the gardenJust a few days in, and we’ve already created a summer ritual of having popsicles out in the fort in our backyard.  We talk, check on the progress in the garden we planted, lick our Pomegranate Berry Popsicles, make a bit of a melting-popsicle mess, and hose off.  It’s summer. It’s delightful.

I created this super healthy July 4th recipe just in time for the holiday!  They’re just the thing to cool off the kiddos at the BBQ!  Super sweet, with no sugar added, these refreshing snacks are packed with antioxidants, and they’re delicious!

For a “grown-up” version of this luscious mixture, pour some in a glass, add a splash or two of vodka and a bit of crushed ice.

Pomegranate Berry Popsicles

These popsicles naturally sweet, super refreshing and perfect for a barbecue!

Ingredients

  • 1/2 cup orange juice
  • 1/2 cup pomegranate juice
  • 1 1/2 cups mixed fresh berries (blackberries, blueberries, raspberries)
  • 14 popsicle sticks
  • 1 standard old school ice-cube tray

Instructions

  • Mix the two juices together and set aside.
  • Make the popsicles in a standard ice-cube tray. Evenly divide the berries and juice mixture into each little compartment in the tray. Then, using the berries for support, place a popsicle stick in the center of each one.Place the tray in the freezer for at least 2 hours. They should be completely solid before you try to remove them.
